Job Requirements

  • high school diploma or equivalent preferred
  • one year experience as a cook in institutional food service preferred

Job Duties

  • Prepare palatable nourishing well-balanced meals to meet residents' nutritional needs
  • supervise dietary department employees in absence of Dietary Manager
  • interview hire and train employees
  • plan assign and direct work
  • prepare work assignment sheets
  • handle calls and find replacements for absent staff
  • transfer employees among kitchens and dining areas as needed
  • prepare performance evaluations
  • reward and discipline employees appropriately
  • schedule and adjust lunch and rest breaks
  • approve errors in time cards with supervisor approval
  • authorize overtime with supervisor approval
  • resolve employee complaints
  • determine rotation of employees in kitchen and dining areas
  • monitor and correct job performance
  • manage facility in absence of higher-ranking officials
  • use independent judgment and discretion
  • handle and store food according to safety guidelines
  • follow standardized recipes
  • prepare foods according to menu cycles by Registered Dietitians
  • cook meals in proper quantities and temperatures
  • use food supplies and equipment efficiently
  • prepare and maintain food alternates for resident preferences
  • supervise kitchen staff in food storage preparation tray assembly and cleaning
  • operate institutional food equipment per guidelines
  • inspect trays post meal service and report to manager
  • store and dispose of food items according to regulations
  • maintain clean and safe food service equipment and workspaces
  • report pest sightings
  • communicate with supervisors to maximize satisfaction
  • assist with inspection preparations and survey training
  • attend in-service education programs and apply knowledge
  • promote and protect residents' rights
  • demonstrate leadership and foster high performance
  • apply process improvement methods
  • comply with safety security hazardous materials and infection control procedures
  • manage information confidentiality and security
  • demonstrate interpersonal skills
