Job Requirements
- High school graduate or equivalent knowledge
- 3 years of experience in food production in a hotel, restaurant or high-end institutional environment
- Ability to obtain ServSafe Food Handler certification within 1 year
- Knowledge of diet restrictions and recipe adaptation
- Ability to measure and scale ingredients accurately
- Proficient time management skills
- Strong interpersonal skills
- Ability to stand, walk, reach above shoulders, squat, bend, twist, kneel and climb throughout workday
- Ability to lift continuously up to 10 lbs, frequently up to 20 lbs and occasionally up to 50 lbs
- Willingness to work first shift with varying start and end times, every other weekend and rotating holidays
- Ability to operate kitchen equipment safely and follow safety protocols
Job Qualifications
- High school graduate or equivalent knowledge
- Typically requires 3 years of experience in food production in settings such as hotel, restaurant or high-end institutional environment
- ServSafe Food Handler certification issued by the National Restaurant Association to be obtained within 1 year
- Familiarity with diet restrictions and ability to adapt recipes accordingly
- Ability to measure and scale amounts of ingredients used in a recipe
- Proficient time management skills
- Strong interpersonal skills
Job Duties
- Review production sheets and recipes to ensure quality and quantity needed for items to prepare
- Prepare food on daily production report according to established guidelines
- Maintain time and production records
- Measure and mix ingredients according to recipe
- Use kitchen utensils and equipment including blenders, mixers, grinders, slicers and tenderizers to prepare soups, salads, gravies, desserts, sauces and casseroles
- Bake, roast, broil and steam meat, fish, vegetables and other foods per recipes
- Carve and slice meats and cheese
- Garnish, display and serve food items according to standards and recipes
- Ensure proper storage and rotation of inventories in refrigerators and freezers
- Monitor food temperatures and utilize procedures to ensure safe food handling
- Follow department standards for safe food handling, storage and sanitation
- Maintain temperature logs for production areas
- Monitor accurate portioning and promote food waste control
- Prepare in small batches to help control waste and cost
- Demonstrate knowledge and skills necessary to provide care appropriate to the age of the patients served
- Assess and interpret patient-specific requirements relative to age-specific needs and provide care accordingly
