Job Requirements

  • high school diploma
  • six months experience in quantity food cookery or equivalent combination of education, training and experience
  • servsafe certification preferred
  • ability to lift up to 75 pounds with assistance
  • ability to stand for extended periods
  • ability to follow safety and hygiene regulations
  • must be free from communicable disease
  • ability to work required hours

Job Duties

  • use proper food handling techniques to prepare, wash, trim, cook and season food items in accordance with standardized recipes
  • prepare and bake rolls, pies, cookies, biscuits, desserts and other dishes in large quantities according to standardized recipes
  • bake, roast, broil and steam meat, fish, poultry and other foods
  • prepare entrees, vegetables and salads
  • review menus, production sheets and recipes to determine type and quantity of foods to be prepared
  • requisition and portion food from refrigerators, freezers and storerooms
  • plan schedule to ensure food will be ready for meal times
  • confer with Nutritional Services Manager regarding modified diet preparation
  • process coverage for absent employees
  • test food quality by visual, taste, smell and temperature checks
  • portion food for individual servings and direct distribution to tray line and household serving
  • serve food on tray line and in nursing home according to menu and orders
  • monitor heat controls and timers on ovens and steamers
  • measure and mix ingredients according to recipes
  • maintain proper temperature and handling of hot and cold foods and document temperatures
  • collect meal tickets and maintain documentation according to departmental standards
  • maintain safety, cleanliness and order of work areas, dishes and equipment
  • report repair and maintenance needs to supervisors
  • comply with safety and quality assurance standards
  • maintain confidentiality of patient and business information
  • interact with patients and residents therapeutically
  • assist with training of new staff
  • attend staff meetings and training sessions
  • complete all assigned cleaning duties promptly
  • interact respectfully with team members
  • assist food service supervisor in ordering produce and dairy items
  • perform related functions as assigned
