Job Requirements
- Complete DOH food safety and sanitation course
- Ability to walk, stand, sit, kneel, push, stoop, crawl, twist, reach above the shoulder, grasp, pull, bend repeatedly, climb stairs and ladders
- Identify colors
- Hear with aid
- See, write, count, read, speak, analyze, alphabetize
- Lift and carry 50 lbs and over
- Mentally alert, emotionally stable and physically fit to cope with emergencies
- Subject to LT’s policies and procedures
- Willingness to travel occasionally across the island, inter-island, and out-of-state
Job Qualifications
- Must have a 2-year associate degree or vocational school diploma
- Minimum 3-4 years’ experience with cooking in high volume production kitchens and with local and Hawaiian foods
- Knowledge of the industry and relevant health and safety regulations
- Strong attention to detail
- Ability to work in a fast-paced environment
- Exceptional time management skills
- Excellent kitchen administration knowledge and ability to work as part of a team
- Excellent understanding of various cooking methods, ingredients, equipment, and procedures
- Must be open to deep collaboration
- TB clearance
- Valid driver’s license
- Proficiency in Microsoft Apps (i.e. Word, Excel, Outlook, etc.)
Job Duties
- Complete DOH food safety and sanitation course successfully
- Understand and comply with standard portion sizes, cooking methods, quality standards, and kitchen rules, policies, and procedures
- Maintain sanitation, health, and safety standards in all work areas
- Clean food preparation areas, cooking surfaces, and utensils
- Verify that prepared food meets requirements for quality and quantity
- Cook and package batches of food according to recipe and production sheets
- Prepare specialty foods following specific methods that usually require short preparation time
- Operate large-volume cooking equipment such as grills, deep-fat fryers, or griddles, tilt skillet, combi oven, pizza oven
- Read food order slips or receive verbal instructions as to food required by customer, manager, or BEO, and prepare and cook food according to instructions
- Measure ingredients required for specific food items being prepared
- Clean, stock, and restock workstations and display cases
- Wash, cut, and prepare foods designated for cooking and recipe standards
- Prep all items needed for service, for later use
- Attend all scheduled employee meetings and offer suggestions for improvement
- Coordinate with and assist fellow employees to meet guests’ needs and support the operation of the restaurant
- Maintain Hazard Analysis and Critical Control Point records
- Flexibility to run multiple stations efficiently
- Wash dishes as needed
- Fill-in for fellow employees where needed to ensure guest service standards and efficient operations
- Schedule activities and equipment use with managers, using information about daily menus to help coordinate cooking times
- Assist with orders and receive delivery of supplies
- Ensure in-house catering orders are directed to proper areas and groups
- Perform additional duties as needed and assist teammates
- Fill in production records accurately
- Complete physical inventory count
