Job Requirements
- Complete DOH food safety and sanitation course
- associate degree or vocational school diploma
- 3-4 years' experience in high volume kitchens
- knowledge of local and Hawaiian foods
- valid driver’s license
- TB clearance
- proficiency in Microsoft Office
- ability to lift and carry 50 lbs
- ability to operate motor equipment
- physically and mentally fit to handle kitchen demands
- ability to travel occasionally
- willingness to work flexible hours
- strong communication skills
- ability to work under pressure and in fast-paced environments
Job Qualifications

- 3-4 years experience cooking in high-volume production kitchens

Job Duties
- Complete DOH food safety and sanitation course successfully
- understand and comply with standard portion sizes, cooking methods, quality standards, and kitchen policies
- maintain sanitation, health, and safety standards in all work areas
- clean food preparation areas, cooking surfaces, and utensils
- verify that prepared food meets quality and quantity requirements
- cook and package batches of food according to recipes and production sheets
- prepare specialty foods following specific methods
- operate large-volume cooking equipment such as grills, deep-fat fryers, tilt skillet, combi oven, and pizza oven
- read food orders or receive verbal instructions and prepare food accordingly
- measure ingredients for specific food items
- clean, stock, and restock workstations and display cases
- wash, cut, and prepare foods as per recipe standards
- prep items needed for service or later use
- attend employee meetings and offer suggestions for improvement
- coordinate with fellow employees to meet guests' needs
- maintain Hazard Analysis and Critical Control Point records
- flexibly manage multiple stations
- wash dishes as needed
- fill in for fellow employees to ensure service standards
- schedule activities and equipment use with managers
- assist with orders and receive delivery of supplies
- ensure in-house catering orders are directed properly
- perform additional duties and assist teammates
- accurately fill in production records
- complete physical inventory count
