Job Requirements
- Minimum of 5 years of experience in varied kitchen positions including food preparation, line cook, fry cook and expediter
- At least 6 months experience in a similar lead cook capacity
- Ability to communicate clearly with managers, kitchen and dining room personnel and guests
- Ability to reach, bend, stoop and frequently lift up to 50 pounds
- Ability to work in a standing position for up to 9 hours
- Flexibility to work nights and weekends
- Recognized Food Safety certification
- Basic knowledge to maintain a safe working environment in a kitchen
Job Qualifications

Job Duties
- Complete opening and closing checklists
- Refer to Daily Prep List or instructions at the start of each shift for assigned duties
- Prepare a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and other kitchen equipment
- Ensure that all food and products are consistently prepared and served according to the restaurant's recipes, portioning, cooking and serving standards
- Understand and comply consistently with standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures
- Portion food products prior to cooking according to standard portion sizes and recipe specifications
- Be familiar and knowledgeable of all Health Department requirements for food preparation and storage, including temperature logs, holding requirements, preparation practices, cooling and storage processes
- Provide orientation of company and department rules, policies and procedures and oversee training of new kitchen employees
- Fill in where needed to ensure guest service standards and efficient operations
- Ensure that all equipment is kept clean and in excellent working condition through inspection and preventative maintenance
- Work with restaurant managers to plan and price menu items and specials
- Establish portion sizes and prepare standard recipe cards for all new menu items
- Control food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures
- Be a follow-up coach for training kitchen personnel in safe operation of all kitchen equipment and utensils
- Maintain appropriate cleaning schedules for kitchen floors, mats, walls, hoods, other equipment and food storage areas
- Adhere to composting and recycling procedures
- Check and maintain proper food holding and refrigeration temperature control points
- Be proficient in all duties and responsibilities of all back-of-house positions including line cook, prep and dish wash
- Communicate effectively with management and service team before, during and after shifts
- Maintain a clean and sanitary work station including all kitchen equipment
- Properly close the kitchen following checklists and assist others
- Attend scheduled employee meetings and contribute suggestions for improvement
- Report equipment and food quality problems promptly
- Inform Kitchen Manager of product shortages immediately
- Use Standard Recipe Card for preparing all products
- Perform other related duties as assigned
- Lead kitchen team during busy shifts and special occasions
