Job Requirements

  • At least high school diploma or equivalent
  • Minimum of 5 years of experience in varied kitchen roles including preparation and cooking
  • At least 6 months experience in a lead cook or similar leadership position
  • Ability to communicate effectively with team members and guests
  • Physical ability to reach, bend, stoop and frequently lift up to 50 pounds
  • Ability to stand for long periods up to 9 hours
  • Willingness to work nights and weekends with a flexible schedule
  • Must hold a recognized Food Safety certification
  • Basic knowledge of kitchen safety protocols and sanitation standards

Job Qualifications

  • A minimum of 5 years of experience in varied kitchen positions including food preparation, line cook, fry cook and expediter
  • At least 6 months experience in a similar capacity
  • Must be able to communicate clearly with managers, kitchen and dining room personnel and guests
  • Must have a recognized Food Safety certification
  • Knowledge of safe working environment practices in a kitchen

Job Duties

  • Complete opening and closing checklists
  • Refer to Daily Prep List or instructions at the start of each shift for assigned duties
  • Prepare a variety of meats, seafood, poultry, vegetables and other food items using broilers, ovens, grills, fryers and other kitchen equipment
  • Ensure all food and products are prepared and served according to recipes, portioning, cooking and serving standards
  • Understand and consistently comply with standard portion sizes, cooking methods, quality standards and kitchen rules
  • Portion food products prior to cooking according to standard portion sizes and recipe specifications
  • Be knowledgeable of Health Department requirements for food preparation and storage, including temperature logs and holding requirements
  • Provide orientation and training of new kitchen employees on company rules, policies and procedures
  • Fill in where needed to ensure guest service standards and efficient operations
  • Maintain kitchen equipment cleanliness and ensure equipment is in good working condition through inspections and preventative maintenance
  • Collaborate with restaurant managers to plan and price menu items, establish portion sizes and prepare standard recipe cards
  • Control food costs by following proper requisition, storage procedures, recipe adherence and waste control
  • Coach kitchen personnel in the safe operation of all kitchen equipment and utensils
  • Maintain appropriate cleaning schedules for kitchen floors, mats, walls, hoods, equipment and food storage areas
  • Adhere to composting and recycling procedures
  • Check and maintain proper food holding and refrigeration temperature control points
  • Be proficient in duties of all kitchen positions including line cook, prep and dishwash
  • Communicate effectively with management and service teams before, during and after shifts
  • Maintain a clean and sanitary work station including all kitchen appliances
  • Properly close the kitchen following checklists and assist others in closing
  • Attend employee meetings and suggest improvements
  • Report equipment and food quality issues promptly
  • Inform Kitchen Manager of product shortages immediately
  • Use Standard Recipe Cards for all products
  • Perform other duties as assigned
  • Lead kitchen team during busy shifts or special occasions
