Job Requirements

  • Possession of ServSafe Food Manager certification or Food Protection Manager Certification or obtain within six months
  • valid Class C California driver’s license
  • successful completion of background investigation
  • ability to lift, carry, or push materials weighting up to 50 pounds
  • ability to walk or stand for long periods
  • availability to work weekends, holidays, evenings, and be on-call
  • obtain and maintain security clearance for working in correctional facility
  • ability to work in a fast-paced, large-scale kitchen environment

Job Qualifications

  • Possession and maintenance of current ServSafe Food Manager or Food Protection Manager Certification
  • ability to obtain required certification within six months of employment if not currently certified
  • valid Class C California driver’s license or equivalent
  • two years of experience in a large commercial or institutional kitchen for Cook I
  • two years including one year as journey-level cook for Cook II
  • ability to read and follow standardized recipes
  • experience in volume food production techniques
  • knowledge of kitchen cleaning and sanitation
  • skill in preparing and serving large quantities of food
  • ability to work rapidly under pressure and cooperatively with others
  • supervisory experience

Job Duties

  • Preparing and serving a variety of dishes in large quantities
  • checking portioning and garnishing of food
  • ensuring food is served correctly according to instructions
  • operating and cleaning industrial food service equipment
  • calculating ingredients needed
  • receiving and storing food
  • training new cooks
  • mentoring students and interns
  • supervising and working alongside incarcerated persons
  • assisting with menu planning and recipe development
  • maintaining cleanliness of all food service areas
