Job Requirements
- Ten or more years experience in high volume preparation and cooking of food in a hotel, restaurant, cafeteria, catering firm, government or private institution
- Ability to read production tickets
- Competency in knife skills
- Knowledge of food service safety practices and procedures, and temperature control
- Proficiency in utilization of flat top grill, convection oven, deep fat fryer, quick cook ovens, and char broiler
- Proficiency in cooking methods including pan frying, sautéing, deep frying, boiling, and baking/roasting
- Ability to work varied days and hours
- Must be able to work at Presbyterian Rust Medical Center
Job Qualifications
- Ten or more years experience in high volume preparation and cooking of food in a hotel, restaurant, cafeteria, catering firm, government or private institution, or internal candidate who demonstrates competency in at least four stations in the kitchen
- Less than high school
Job Duties
- Assist in the preparation of hot food items for all areas as indicated by menu cycles
- Responsible for preliminary preparation of food items for next day as indicated by menu cycle
- Ability to read production tickets
- Assist with routine cleaning and sanitation of areas
- Assist with serving food items as indicated by established workflow
- Demonstrate competency in knife skills
- Demonstrate competency in food service safety practices and procedures, and temperature control
- Assist with fruit and vegetable preparation and food portioning, and other bulk food preparation
- Assist with preparing Grab and Go and other retail items
- Proficient in utilization of flat top grill, convection oven, deep fat fryer, quick cook ovens, and char broiler
- Proficient in utilization of additional cooking equipment including slicer, standing mixer, and combi oven, tilt skillet, soup kettles
- Proficient in various cooking methods including pan frying, sautéing, deep frying, boiling, and baking/roasting
- Proficient in additional cooking methods including grilling/broiling, roasting, simmering, steaming, and braising, stewing, blanching, and poaching
- Butchering/Meat fabrication
- Training
