Job Requirements
- Ten or more years experience in high volume food preparation and cooking
- less than high school education
- ability to read production tickets
- competency in knife skills
- knowledge of food service safety practices
- proficiency with cooking equipment
- ability to perform multiple cooking methods
- willingness to work varied days and hours
Job Qualifications
- Ten or more years experience in high volume food preparation and cooking in hotels, restaurants, cafeterias, catering firms, government or private institutions
- internal candidates with competency in at least four kitchen stations
- proficiency in knife skills
- knowledge of food safety practices and temperature control
- ability to operate various kitchen equipment
- skilled in a wide range of cooking methods
- ability to read production tickets
- ability to assist and train kitchen staff
Job Duties
- Prepare hot food items for all areas according to menu cycles
- prepare preliminary food items for next day as indicated by menu cycle
- read and interpret production tickets
- assist with routine cleaning and sanitation of kitchen areas
- assist with serving food items as per established workflow
- demonstrate competency in knife skills
- apply food service safety practices and temperature control
- assist with fruit and vegetable preparation and food portioning
- prepare Grab and Go and retail items
- utilize flat top grills, convection ovens, deep fat fryers, quick cook ovens, and char broilers proficiently
- operate additional equipment including slicers, standing mixers, combi ovens, tilt skillets, and soup kettles
- apply multiple cooking methods including pan frying, sautéing, deep frying, boiling, baking, roasting, grilling, broiling, simmering, steaming, braising, stewing, blanching, and poaching
- perform butchering and meat fabrication
- conduct training for kitchen staff
