Job Requirements
- high school diploma or equivalent
- culinary experience
- ability to work flexible hours including long shifts
- physical ability to exert up to 50 pounds of force occasionally and 20 pounds frequently
- ability to stand for extended periods
- ability to withstand hot and cold temperature variations
- knowledge of hotel menu preparation standards
- proficiency in multiple cooking techniques
- understanding of herbs and spices and their usage
Job Qualifications
- high school diploma or equivalent and/or experience in a hotel or related field preferred
- culinary experience required
- flexible and able to work long hours
- able to exert up to 50 pounds of force occasionally and 20 pounds frequently
- able to stand during entire shift
- able to withstand temperature variations both hot and cold
- thorough knowledge of menus and preparation required according to hotel standards
- proficiency in cooking techniques including charbroiling, poaching, deep-frying, sauté, braising, roasting and par-cooking
- knowledge of herbs and spices and their proper use
Job Duties
- maintain cleanliness and organization of all storage areas
- complete necessary food and station preparation prior to the opening of the restaurant
- prepare and display buffet food items according to hotel standards
- recognize quality standards in fresh vegetables, fish, dairy, and meat products
- maintain clean and sanitary environment with knowledge of proper handling, storage, and sanitation
- prepare food for banquets following banquet event orders
- prepare and service food for the employee cafeteria as directed
- prepare all foods following hotel standard recipes
- breakdown buffets and kitchen line and store food and equipment properly
- work banquet food stations as scheduled
- know location and operation of all fire extinguishing equipment
- practice safe work habits to avoid injury
- use production charts as specified by hotel standards
- support any kitchen position that needs help
- follow health department and company regulations regarding food and storage standards
- operate and maintain cleanliness of all kitchen equipment
- maintain a clean-as-you-go policy
- assist in storage and rotation of food items according to procedures
- sign keys out and back in under supervision as needed
