Job Duties
- Prepare all food items hot and cold based on standardized recipes
- maintain cleanliness and organization of kitchen and storage areas
- complete food and station preparation prior to restaurant opening
- prepare and display buffet food items according to hotel standards
- proficiently execute cooking techniques including charbroiling, poaching, deep-frying, sautéing, braising, roasting and par-cooking
- prepare hot and cold sauces
- recognize quality standards in fresh vegetables, fish, dairy and meat products
- maintain clean and sanitary environment following proper handling, storage and sanitation
- prepare food for banquets according to event orders
- operate and maintain kitchen equipment
- practice safe work habits
- follow health department and company safety regulations
- assist in training other cooks and pantry staff
- assist in storage and rotation of food items
- support any kitchen position as needed
- maintain "Clean As You Go" policy
- break down buffets and kitchen line at end of service
