Job Requirements

  • completion of a course in cooking or baking in a technical school including substantial training in quantity cooking may substitute for one year of experience
  • experience limited to serving or cleaning is not qualifying
  • ability to lift and carry up to 70 pounds
  • compliance with Prison Rape Elimination Act (PREA) requirements
  • availability to work beyond scheduled hours
  • willingness to work in a secure juvenile detention facility
  • legal authorization to work in the United States

Job Qualifications

  • two years of progressively responsible experience in quantity cooking
  • thorough knowledge of foodstuffs and cooking methods
  • ability to prepare simple to complex meals with little or no supervision
  • experience in preparing modified or special diets
  • supervisory experience is preferred
  • ability to work flexible hours including evenings, holidays, and weekends

Job Duties

  • perform cooking activities at a cooking station in a large kitchen or all cooking activities in a small kitchen
  • supervise kitchen and cook helpers
  • prepare meals following various cooking methods including roasting, baking, broiling, and frying
  • assist in preparing baked products such as breads, cakes, pies, and cookies
  • prepare special diet meals including soft, salt-free, allergy or puree diets
  • determine the best use of leftovers
  • ensure food safety and hygiene standards are met
