Job Duties

  • Cleans, cuts, and grinds meats, poultry, and seafood
  • dips food items in crumbs, flour, and batter to bread them
  • stirs and strains soups and sauces
  • grills, sautés, and expedites food
  • weighs and measures designated ingredients
  • carries pans, kettles, and trays of food
  • stores foods in designated areas
  • assists in the training of Cook 3 and steward/utility staff
  • multitasks multiple cooking items at once
  • cleans work areas, equipment, and utensils
  • segregates and removes garbage
  • distributes supplies, utensils, and portable equipment
  • prepares and presents menu items properly
  • reads menu to estimate food requirements
  • orders food from supplier or procures from storage
  • dates and rotates food containers
  • practices safety standards at all times
  • collaborates with Room Chef, Sous Chefs, and Cook 1
  • adjusts thermostat controls on cooking equipment
  • measures and mixes ingredients
  • bakes, roasts, broils, and steams foods
  • adds seasoning during cooking or mixing
  • observes and tests foods for doneness
  • carves meats and garnishes servings
  • bakes bread, rolls, cakes, and pastry
  • washes, peels, cuts, and shreds vegetables and fruits
  • butchers chickens, fish, and shellfish
  • works multiple stations
  • stands and walks for prolonged periods
  • knows Indiana Gaming regulations and internal controls
  • follows company service standards
  • works scheduled hours including holidays and weekends
  • performs other duties as assigned
