Job Requirements

  • High school diploma or equivalent
  • at least one year of experience in a food preparation role preferred
  • must be at least 18 years of age
  • ability to stand and walk for 7 or more hours
  • knowledge of Indiana gaming regulations
  • ability to work various hours including weekends and holidays
  • ability to follow safety and sanitation standards
  • willingness to learn and assist in training others

Job Duties

  • Cleans, cuts, and grinds meats, poultry, and seafood
  • dips food items in crumbs, flour, and batter to bread them
  • stirs and strains soups and sauces, grills, sautés, and expedites food
  • weighs and measures designated ingredients
  • carries pans, kettles, and trays of food to and from workstations, stove, and refrigerator
  • stores foods in designated areas
  • assists in the training of cook 3 and steward/utility staff
  • multitasks many cooking items at once
  • cleans work areas, equipment, and utensils
  • segregates and removes garbage
  • distributes supplies, utensils, and portable equipment
  • prepares and presents menu items properly
  • reads menu to estimate food requirements and orders food
  • dates all food containers and rotates food correctly
  • practices safety standards at all times
  • works closely with the room chef, sous chefs and cook 1 to ensure proper preparation, stocking, sanitation and presentation
  • adjusts thermostat controls for ovens, broilers, grills, roasters, and steam kettles
  • measures and mixes ingredients according to recipes
  • bakes, roasts, broils, and steams meats, fish, vegetables, and other foods
  • adds seasoning during mixing or cooking
  • tests foods being cooked by tasting, smelling, and piercing
  • carves meats, portions food, adds gravies and sauces, garnishes servings
  • bakes bread, rolls, cakes, and pastry
  • washes, peels, cuts, and shreds vegetables and fruits
  • butchers chickens, fish, and shellfish correctly
  • works multiple stations
  • follows Indiana gaming regulations and internal controls
  • follows company service standards
  • available to work various hours, holidays, and weekends
  • performs other duties as assigned
