Job Requirements

  • high school diploma or ged
  • culinary arts degree from accredited school preferred
  • minimum three years experience in high volume line cooking or production cooking in full service dining or food service establishment with emphasis on specialty cuisine menu production preferred
  • must obtain and maintain a food handler's card
  • at the discretion of the san manuel tribal gaming commission may be required to obtain and maintain a gaming license
  • no driving responsibilities
  • able to work evenings weekends and holidays
  • able to work in fast paced high demand environment
  • strength to occasionally lift up to 40 pounds
  • must present neat clean and well groomed appearance
  • may be exposed to fumes or airborne particles including secondhand smoke

Job Qualifications

  • high school diploma or ged
  • culinary arts degree from accredited school preferred
  • minimum three years experience in high volume line cooking or production cooking in full service dining or food service establishment with emphasis on specialty cuisine menu production
  • demonstrates knowledge of food preparation and presentation
  • capable of following procedures and taking direction
  • able to read recipes production lists and collateral paperwork to perform duties

Job Duties

  • maintains designated workstation ensuring recipes remain consistent in flavor profiles quality and appearance and production time frames are adhered to
  • ensures workstation is fully stocked for forecasted business flow restocks before end of shift
  • possesses advanced knowledge of basic food products as well as cuisine specific food products for specialty food production
  • possesses working knowledge of standard and specialty food equipment such as woks rotisseries smokers and teppanyaki grills
  • possesses advanced knife skills and ability to perform all basic cooking methods
  • multitasks to ensure no interruption in servicing of guests
  • follows food rotation method fifo labeling and dating all food items ensuring proper disposal and logging of expired items
  • reports any injuries accidents or unsafe work environment issues to management immediately
  • performs other duties as assigned to support efficient operation of the department
