Job Requirements
- High school diploma or equivalent
- Minimum 2 years of culinary experience in a restaurant or hotel kitchen
- Certification in food safety and sanitation preferred
- Ability to work in a fast-paced environment
- Physical ability to stand for extended periods and lift heavy items
- Effective time management skills
- Flexibility to work various shifts including weekends and holidays

Job Duties
- Embody the values and guiding principles of Hotel Drover
- Ability to manage multiple projects/priorities and deliver results in a demanding, fast-paced environment
- Build and maintain relationships with all stakeholders while acting as an extension of the Hotel Drover brand
- Assign tasks, share management and customer expectations and provide training and direction to assigned staff
- Support an environment of high efficiency, quality and customer service
- Assist with overseeing production for line operation
- Organize the day's prepping for the cooks and restaurant, supervise line set-up and prepping
- Monitor labor and make recommendations to adjust staffing depending on needs of the restaurants
- Assist in directing and correcting the presentation and portioning of food
- Ensure food leaves the kitchen simultaneously and in a timely fashion, is of high quality, and is prepared according to order
- Oversee and participate in preparation of food items, such as salads, soups, sauces, meats, and vegetables according to prescribed recipes and guidelines
- Bake, roast, broil and steam meats, fish, vegetables and other foods
- Add seasoning to foods during mixing or cooking, according to recipe and adjust as needed
- Read menu to estimate food requirements and requisition food from storage
- Notify manager of inventory shortages
- Ensure all food is stored in proper containers and at proper storage and holding temperatures
- Adjust thermostat controls to regulate/maintain appropriate temperature of ovens, broilers, grills, roaster and steam kettles
- Observe and test foods being cooked by tasting, smelling, and piercing with fork to observe that it is cooked
- Use thermometer to ensure food is cooked/maintained at proper temperature
- Carve meats, portion food onto serving plates, add gravies and sauces and garnish servings
- Follow all standard food handling, sanitation and health department guidelines
- Ensure compliance with federal, state, local and company health, safety, and sanitation standards
- Must wear non-slip, oil resistant shoes
- Report to work as scheduled (on time and on regular basis) is an essential function of the job
