Job Qualifications

  • Three years of food prep experience in a restaurant or hotel
  • culinary degree preferred but not required
  • knowledge of food preparation techniques
  • knowledge of health department rules and regulations
  • serve safe certified
  • ability to follow recipes accurately
  • effective communication skills
  • ability to multitask and prioritize
  • knowledge of local health department sanitation laws

Job Duties

  • Set up and breakdown of stations
  • prepare all food cooking in assigned areas
  • ensure quality of prep and service at highest standards
  • prepare daily and nightly prep lists for following day
  • check all meats, seafood, produce, and grocery supplies
  • work collaboratively with other cooks and chefs de partie
  • keep immediate supervisor informed of all problems or matters requiring attention
  • follow safe practices in the kitchen
  • participate in required trainings
  • monitor quality of all meat, produce, and presentation
  • control quality and quantity of mise en place and plated dishes on designated stations
  • maintain refrigerator and kitchen cleanliness and organization
  • practice FIFO storage in fridges and freezers
  • apply Department of Health practices
  • ensure proper labeling of food produce per health department
  • update temperature logs and ensure visibility
  • use appropriate cutting boards by food product/colors
  • notify executive sous chef or sous chef of special product needs for functions
  • follow SOPs for kitchen preparation and specific Raffles Boston tasks
  • know and apply local health department sanitation laws
  • assess food portion size and visual appeal
  • communicate with chefs to reduce food waste
  • operate all stoves, ovens, grills, and fryers
  • maintain Serve Safe certification
  • prepare foods on proper plateware
  • follow recipes accurately
  • be willing and able to work multiple stations, shifts, and outlets
  • execute luxury hotel standards and comply with special guest requests
  • perform other duties as assigned
