Job Requirements

  • High school diploma or equivalent
  • Minimum 2 years of culinary experience, preferably in a hotel or restaurant setting
  • Knowledge of food safety regulations and kitchen hygiene practices
  • Ability to work flexible hours including weekends and holidays
  • Must wear non-slip, oil resistant shoes
  • Ability to work well under pressure
  • Strong teamwork and leadership skills
  • Good organizational skills
  • Must be punctual and reliable

  • Strong knowledge of food safety and sanitation standards
  • Familiarity with menu planning and costing

Job Duties

  • Embody the values and guiding principles of Hotel Drover
  • Ability to manage multiple projects/priorities and deliver results in a demanding, fast-paced environment
  • Build and maintain relationships with all stakeholders while acting as an extension of the Hotel Drover brand
  • Assign tasks, share management and customer expectations and provide training and direction to assigned staff
  • Support an environment of high efficiency, quality and customer service
  • Maintain detailed knowledge of menus, recipes, food quality standards and regulations
  • Assist with overseeing production for line operation and organize the day's prepping for the cooks and restaurant
  • Monitor labor and make recommendations to adjust staffing depending on needs
  • Assist in directing and correcting the presentation and portioning of food
  • Ensure food leaves the kitchen simultaneously and in a timely fashion, is of high quality, and prepared according to order
  • Oversee and participate in preparation of food items such as salads, soups, sauces, meats, and vegetables according to prescribed recipes and guidelines
  • Bake, roast, broil and steam meats, fish, vegetables and other foods
  • Add seasoning according to recipes and adjust as needed
  • Read menus to estimate food requirements and requisition food from storage
  • Notify manager of inventory shortages
  • Ensure food is stored in proper containers and temperatures
  • Adjust thermostat controls to regulate temperature of ovens and other cooking equipment
  • Observe and test foods being cooked by tasting, smelling, and piercing with a fork
  • Use thermometer to ensure food is cooked/maintained at proper temperature
  • Carve meats, portion food onto plates, add gravies, sauces and garnishes
  • Follow all food handling, sanitation and health department guidelines and policies
  • Wear non-slip, oil resistant shoes
  • Report to work as scheduled on time and regularly
