Job Requirements

  • High school diploma or equivalent
  • food service training
  • one year of food service or related experience
  • prior supervisory experience preferred
  • must be able to pass food handler certification within 30 days of hire
  • must complete required pre-service training
  • valid driver’s license in Texas with acceptable driving record unless waived by management

Job Duties

  • Prepare and cook quantity of food required according to menu and production sheet
  • maintain kitchen equipment in orderly workable condition
  • ensure work area is safe, clean and sanitary at all times
  • ensure the count and control of knives and other controlled kitchen tools
  • provide an accurate count of all controlled items at the beginning and end of each shift
  • prepare foods as directed for special facility functions and special diets when prescribed by staff doctor
  • assist in cleaning kitchen work areas following each meal
  • coordinate the work of inmates assigned to assist in the cafeteria
