Job Requirements

  • high school diploma or equivalent
  • culinary experience
  • ability to work flexible and long hours
  • ability to perform medium work involving lifting up to 50 pounds
  • ability to stand throughout entire shift
  • ability to withstand hot and cold temperature variations
  • knowledge of menu preparation and culinary techniques
  • safety awareness in kitchen environment

Job Qualifications

  • high school diploma or equivalent preferred
  • experience in hotel or related field preferred
  • culinary experience required
  • flexible to work long hours
  • ability to exert medium work involving up to 50 pounds occasionally
  • ability to stand for entire shift
  • ability to withstand temperature variations
  • thorough knowledge of menus and preparation methods
  • proficiency in cooking techniques including charbroiling, poaching, deep-frying, sauté, braising, roasting, and par-cooking
  • knowledge of herbs and spices and their proper use

Job Duties

  • maintain cleanliness and organization of all storage areas
  • complete necessary food and station preparation prior to restaurant opening to ensure prompt and efficient service
  • prepare and display buffet food items according to hotel standards
  • recognize quality standards in fresh vegetables, fish, dairy, and meat products
  • maintain a clean and sanitary environment with proper handling and storage
  • prepare food for banquets following banquet event orders
  • prepare and service food for the employee cafeteria as specified
  • prepare all foods following hotel standard recipes and chef directions
  • breakdown buffets and kitchen line, storing food and equipment properly
  • work banquet food stations as scheduled
  • know the location and operation of all fire extinguishing equipment
  • practice safe work habits to avoid injury
  • use production charts as specified by hotel standards
  • support any kitchen position in need of help
  • follow all health department and company regulations concerning food safety and storage
  • operate and maintain cleanliness of all kitchen equipment
  • maintain a clean as you go policy
  • assist in storage and rotation of food items
  • sign keys out and in under supervision as needed
