Job Requirements

  • High school diploma or equivalent
  • 1-2 plus years of professional kitchen experience preferably in hotel, resort, or high-volume restaurant environments
  • valid food handler certification
  • ability to stand and walk for entire shifts with frequent bending and reaching
  • capable of lifting and carrying 40 to 50 pounds
  • able to work in hot, cold, and humid kitchen conditions
  • safe handling of knives and kitchen equipment with personal protective equipment
  • reliable and punctual work ethic

Job Qualifications

  • 1-2 plus years of professional kitchen experience preferably in hotels, resorts, or high-volume restaurants
  • strong knife skills
  • proficiency in at least two kitchen stations
  • accurate recipe and portion adherence
  • working knowledge of food safety standards including ServSafe and HACCP
  • allergy protocol awareness
  • ability to stay calm under pressure
  • clear communication skills
  • reliability and punctuality
  • food handler certification required
  • ServSafe Food Protection Manager certification preferred or to be obtained within 30 days

Job Duties

  • Set up and break down assigned kitchen stations including grill, saute, fry, garde manger, and breakfast
  • maintain station pars, labels, and cleanliness
  • cook to recipe specifications and temperature
  • plate dishes to presentation standards
  • meet ticket-time goals
  • complete daily prep lists including batching sauces and stocks
  • verify yields and report variances
  • support banquet and catering events as scheduled
  • perform line checks and taste/temperature checks
  • maintain food safety logs including cooling, holding, and cleaning records
  • follow ServSafe and HACCP food safety practices including FIFO and allergen awareness
  • assist in training junior cooking and prep staff on knife skills, station setup, and recipe execution
  • model effective communication on the line
  • coordinate with Expo, Dish, and FOH staff for smooth kitchen operations
  • date, label, and rotate inventory
  • report and manage early 86 items
  • minimize waste and overproduction
  • participate in inventory counts and ordering as needed
  • use and clean kitchen equipment safely
  • report maintenance needs
  • keep back-of-house areas organized and clean
