Job Requirements
- high school diploma or ged
- culinary arts degree from accredited school preferred
- minimum three years experience in high-volume line cooking or production cooking in full-service dining or food service establishment with emphasis on specialty cuisine preferred
- ability to follow procedures and take direction
- ability to read recipes production lists diagrams and logs
- food handler's card required
- may be required to obtain and maintain gaming license by San Manuel Tribal Gaming Commission
- ability to work evening weekend and holiday shifts
- physical strength to lift carry push pull moving objects up to 40 pounds
- must maintain a neat clean well groomed appearance in accordance with policy
- ability to work in fast paced high demand environment
Job Qualifications

- culinary arts degree from accredited school preferred
- minimum three years experience in high-volume line cooking or production cooking in full-service or specialty cuisine dining establishment preferred
- knowledge of food preparation and presentation
- capable of following procedures and taking direction
- ability to read recipes production lists diagrams and logs to perform duties
- food handler's card required
- ability to work flexible shifts including evenings weekends and holidays
Job Duties
- maintain designated workstation ensuring recipe consistency in flavor profile quality and appearance and adhere to production time frames
- ensure workstation is fully stocked for forecasted business flow and restock before end of shift
- utilize advanced knowledge of basic and specialty food products and equipment including woks rotisseries smokers and teppanyaki grills
- perform advanced knife skills and basic cooking methods multitasking to ensure uninterrupted guest service
- label and date all food items using FIFO method ensuring freshness and disposal of expired items with proper logging
- report injuries accidents or unsafe work environment issues to management immediately
- perform other duties as assigned to support efficient department operation
