Job Requirements

- Proven culinary experience
- Ability to work flexible hours including long shifts

Job Qualifications
- High school diploma or equivalent and/or experience in a hotel or related field preferred
- Culinary experience required
- Flexible and able to work long hours when necessary
- Physical ability to exert up to 50 pounds of force occasionally and 20 pounds frequently
- Ability to stand for entire shifts
- Capacity to work in varying temperature conditions
- Thorough knowledge of menus and preparation according to hotel standards
- Proficiency in cooking techniques including charbroiling, poaching, deep-frying, sautéing, braising, roasting, and par-cooking
Job Duties
- Maintain cleanliness and organization of all storage areas
- Complete necessary food and station preparation prior to the opening of the restaurant to ensure efficient service during operating hours
- Prepare and display buffet food items according to hotel standards
- Recognize quality standards in fresh vegetables, fish, dairy, and meat products
- Maintain clean and sanitary work environment following proper handling, storage, and sanitation procedures
- Prepare food for banquets according to Banquet Event Orders
- Prepare and service food for the Employee Cafeteria as directed by the Chef or Kitchen Supervisor
- Follow hotel standard recipes for all food preparation and prepare specials under supervision
- Breakdown buffets and kitchen lines, properly storing food and equipment
- Work banquet food stations as scheduled
- Understand the location and operation of all fire extinguishing equipment
- Practice safe work habits to prevent injury
- Use Production Charts as specified by hotel standards
- Support any kitchen position as needed
- Comply with Health Department and company food safety regulations
- Operate and maintain cleanliness of all kitchen equipment
- Maintain a 'Clean As You Go' policy
- Assist in food storage and rotation according to hotel procedures
- Sign keys out and back in under supervision as needed
