Job Qualifications

  • At least one year line or sushi bar experience
  • knowledge or experience in omakase or Japanese cuisine a plus

Job Duties

  • Execute prep and service to exact recipes and standards
  • maintain immaculate mise and station organization
  • fabricate seafood and produce with careful yield control
  • cook rice and season components with consistency
  • plate and pass courses to the chef's timing for a 24-seat omakase
  • uphold food safety and standard operating procedures including temperature logs, labeling, day dots, sanitation
  • assist with daily close
