Job Requirements
- Stand/walk for entire shift
- frequent bending, reaching, and repetitive motions
- lift/carry up to 40-50 lbs
- work in hot, cold, and humid environments
- safely use knives and kitchen equipment with required PPE
Job Qualifications
- 1-2 years line-cook experience preferred
- solid knife skills and familiarity with common cooking methods (saute, roast, grill, fry, blanch)
- ability to read tickets, recipes, and production sheets
- basic math skills for weights and measures
- food handler/ServSafe certification preferred or to be obtained within 30 days
- reliable, detail-oriented, and calm under pressure
- punctual with a strong work ethic
- able to work a flexible schedule including weekends and holidays
Job Duties
- Complete daily prep lists
- measure, label, and date food
- follow recipes, portion sizes, and presentation standards
- set up and break down assigned station (grill, saute, fry, garde manger, breakfast)
- maintain par levels and mise en place
- cook food to correct temperatures and doneness
- meet ticket-time goals
- ensure consistent seasoning and plating
- follow ServSafe/HACCP practices including handwashing, glove use, time/temperature control, allergen awareness, FIFO, and cross-contamination prevention
- maintain temperature and cleaning logs
- safely operate and clean kitchen equipment such as ovens, fryers, flat tops, grills, slicers, mixers, knives, and smallwares
- report malfunctions immediately
- minimize waste and over-production
- follow yield/portion controls and storage standards
- help receive deliveries
- verify quality/specs
- rotate and store products properly
- coordinate with BOH/FOH to ensure smooth service and special requests
- assist other stations as needed
- support banquets/events when applicable
- complete side work, deep cleans, and special prep/projects as assigned
