Job Requirements

  • A high school diploma or GED
  • minimum one-year experience in large scale cooking in a commercial or industrial kitchen
  • possess a valid Texas Food Handlers Permit
  • ability to become First Aid, CPR, and AED certified and maintain certification
  • US citizen or lawful permanent resident with at least five years residence in the US
  • pass criminal background and consumer credit check
  • obtain and maintain DHS/ICE government clearance
  • pass pre-employment and random drug tests
  • pass a medical examination and meet health requirements
  • at least 18 years of age
  • knowledge of day-to-day operation of an industrial kitchen
  • ability to follow and understand written and verbal orders, policies and regulations
  • literate and able to interpret printed rules, regulations, recipes, and detailed instructions
  • exercise good judgment, alertness, and even temperament
  • ability to maintain poise and self-control during mental stress events such as fires, explosions, disturbances, and evacuations
  • maintain professional personal appearance and calm demeanor
  • possess high integrity, accountability, and adhere to American Correctional Association (ACA) and DHS ICE standards
  • demonstrate ability to work with diverse population including different cultures, values, and lifestyles
  • maintain current physical residence in continental United States
  • work in indoor industrial kitchen within detention facility working alongside detainee workers
  • able to stand for four or more hours

Job Duties

  • Independently perform moderately difficult food preparation tasks such as cooking steaks, chops, cutlets, hamburgers, eggs, and salads
  • assist with and perform all duties necessary to maintain food service operations under Cook II supervision
  • prepare a variety of foods in large quantities using multiple cooking methods
  • prepare special diets for non-citizens
  • plan cooking schedules to ensure food readiness at prescribed times
  • deliver food to pods and housing units at prescribed times
  • measure, mix, stir, cut, grind, chop, and season ingredients according to recipes
  • test foods for cooking completion and adjust heat controls
  • monitor baking, roasting, broiling, frying, and steaming processes
  • carve and divide food portions into individual servings
  • assist in training non-citizen volunteers
  • monitor daily food production for quality, quantity, safety, and sanitation compliance
  • review menus to determine food types and quantities
  • manage kitchen utensils and supplies
  • load and unload delivery trucks
  • deliver and serve food trays
  • complete work assignments with professionalism, quality, and craftsmanship
