Job Requirements

  • High school education or GED
  • Minimum 1 year relevant commercial cooking experience
  • Must have ServSafe Food Handler Certification
  • Ability to work flexible work schedule including weekends, evenings and holidays
  • Must be able to work a flexible schedule
  • Ability to maintain confidentiality
  • Ability to communicate clearly orally and in writing
  • Ability to make decisions and solve problems while working under pressure
  • Must have strong organizational skills
  • Must be detail oriented
  • Must be ambitious and target focused
  • Working knowledge of Microsoft Office package
  • Must comply with drug-free workplace policy and maintain any security clearance required
  • Must adhere to food handlers safety components and HACCP policies
  • Must pass required training programs
  • Must adhere to all company safety and risk management policies and procedures.

Job Qualifications

  • High school education or GED
  • Culinary degree preferred
  • Minimum 1 year relevant work experience in a commercial kitchen environment
  • Must have ServSafe Food Handler Certification
  • Ability to communicate orally and in writing
  • Ability to effectively delegate and develop team members
  • Ability to maintain confidentiality of information
  • Ability to make decisions and solve problems under pressure
  • Detail oriented and strong organizational skills
  • Working knowledge of Microsoft Office package including Excel, PowerPoint, Word

Job Duties

  • Comply with all authorized and appropriate regulations, directives, standards operating procedures and instructions issued by the air force or TRDI
  • Cook to order hamburgers, cheeseburgers, salads, grilled ham and cheese sandwiches, eggs to order, omelets, steaks, chops, cutlets and other related short order items
  • Assist Cook II in meal preparation and food service tasks
  • Prepare required food items in accordance with the production log and shift leader directions
  • Wash, peel, chop, dice, slice and prepare fruits, meats and vegetables as per standard recipes
  • Request subsistence from Cook II and storeroom personnel
  • Pan up bacon, sausage, and ham for breakfast and mid-meals
  • Setup specialty bars for potato, pasta, fruit, omelet, and hamburger as required
  • Work grill during meal periods
  • Garnish food items and serving lines
  • Use progressive cooking techniques
  • Check and log refrigerator temperatures
  • Cover, time and date all food items before refrigeration
  • Serve correct food portions using proper utensils and deli gloves
  • Check plates and bowls for cleanliness
  • Replenish food items from warmers to ensure availability
  • Inform back-up cook when items are running low
  • Keep line free of spills and food debris using proper sanitizing agents
  • Check food temperatures during meals to maintain 140 degrees
  • Assume shift leader duties in his/her absence
  • Follow food handlers safety components and HACCP policies
  • Use proper customer service techniques
  • Remove and cover leftover food at meal close
  • Prepare in-flight meal requests
  • Advise facility manager of ration shortages
  • Practice good sanitation and participate in safety meetings and training
  • Comply with company safety, risk management policies, drug-free workplace policy and operations security standards
  • Maintain site-specific accident prevention plans
  • Attend all allergy and foodborne illness in-service training
  • Pass and maintain any required security clearance
  • Adhere to property control plan for government furnished property
  • Comply with energy conservation and recycling programs
  • Other tasks as directed by Project Manager or Supervisor.
