Job Requirements

  • High school education or GED
  • 1 year relevant experience in commercial kitchen environment
  • Commercial cooking experience
  • Must have ServSafe Food Handler Certification
  • Must be able to work a flexible schedule including weekends, evenings, and holidays
  • Ability to communicate effectively both orally and in writing
  • Ability to delegate and develop team members
  • Ability to maintain confidentiality
  • Strong decision-making and problem-solving under pressure
  • Detail oriented and strong organizational skills
  • Working knowledge of Microsoft Office

Job Duties

  • Comply with all authorized and appropriate regulations, directives, standards, operating procedures, written and verbal instructions issued by the Air Force or TRDI
  • Cook to order hamburgers, cheeseburgers, salads, grilled ham and cheese sandwiches, eggs to order, omelets, steaks, chops, cutlets and other related items of a short order cook
  • Assist Cook II as needed
  • Prepare required items in accordance with the production log and directed by shift leader
  • Wash, peel, chop, dice and slice fruits, meats, and vegetables in accordance with standard recipe requirements
  • Request subsistence from Cook II
  • Pan up bacon, sausage and ham for breakfast and mid meals
  • Setup specialty bars such as potato, pasta, fruit, omelet, and hamburger bars
  • Work grill during meal periods
  • Garnish food items and serving lines
  • Use progressive cooking techniques
  • Check and log refrigerator temperatures
  • Cover, time, and date all food items before refrigerating
  • Serve food items in correct portions using deli gloves when necessary
  • Check plates and bowls for cleanliness
  • Replenish food items from food warmers
  • Inform back-up cook when items run low
  • Keep line free of spills and food debris using appropriate sanitizing agents
  • Check food temperatures to maintain at least 140 degrees
  • Assume duties of shift leader in their absence
  • Follow food handlers safety components
  • Use proper customer service techniques
  • Remove food from line after meals, cover, time, and date leftovers
  • Request subsistence from storeroom personnel
  • Taste test food items during preparation
  • Prepare in-flight meal requests
  • Ensure food is replenished on line
  • Advise facility manager of ration shortages
  • Practice good sanitation techniques
  • Dispose of leftovers properly and complete waste logs
  • Comply with energy conservation and recycling programs
  • Attend allergy and foodborne illness in-service training
  • Comply with HACCP policies and procedures
  • Report accidents and injuries timely
  • Participate in safety meetings and training
  • Maintain security clearance and comply with drug-free workplace policies
  • Adhere to operations security and property control plans
  • Maintain site-specific accident prevention plan
  • Attend designated training programs
  • Perform other tasks as directed by Project Manager or Supervisor.
