Job Requirements

  • High school education or GED
  • culinary degree preferred
  • 1 year relevant work experience in a commercial kitchen environment
  • must have commercial cooking experience
  • must have ServSafe Food Handler Certification
  • ability to communicate orally and in writing
  • ability to effectively delegate and develop team members
  • ability to maintain confidentiality
  • ability to make decisions and solve problems under pressure
  • detail oriented and strong organizational skills
  • ability to work a flexible schedule including weekends, evenings and holidays
  • working knowledge of Microsoft Office package
  • must pass and maintain required security clearance

Job Duties

  • Comply with all authorized regulations and operating procedures
  • cook to order hamburgers, salads, sandwiches, eggs, steaks, chops and other short order items
  • assist Cook II as needed
  • prepare required items according to production log and shift leader directions
  • prepare fruits, meats, and vegetables by washing, peeling, chopping, dicing, and slicing
  • request subsistence from Cook II
  • pan bacon, sausage and ham for breakfast and meals
  • set up specialty bars such as potato, pasta, fruit, omelet, and hamburger bars
  • work grill during meal periods
  • garnish food items and serving lines
  • use progressive cooking techniques
  • check and log refrigerator temperatures
  • cover, time, and date food items before refrigeration
  • serve correct food portions using proper utensils and gloves
  • check plate cleanliness
  • replenish food from warmers
  • inform back-up cook when supplies run low
  • maintain cleanliness by removing spills and debris using appropriate sanitizers
  • check food temperatures ensuring 140 degrees is maintained
  • assume shift leader duties when absent
  • comply with Food Handlers Safety Components
  • practice proper customer service techniques
  • remove and properly cover leftover food at meal close
  • perform tasks as directed by Project Manager/Supervisor
  • request subsistence from storeroom
  • conduct food taste tests
  • prepare in-flight meal requests
  • ensure food replenishment on line
  • advise manager on ration shortages
  • maintain sanitation and safety practices
  • complete waste logs
  • comply with energy conservation and recycling programs
  • attend allergy and foodborne illness in-service training
  • comply with HACCP policies
  • report accidents promptly
  • comply with company safety and risk management policies
  • participate in safety training
  • maintain required security clearances
  • adhere to Operations Security and Property Control plans
  • follow safety and health programs including OSHA, DOD, Armed Forces, federal, state and local requirements
  • maintain site-specific Accident Prevention Plan
  • attend training programs
  • other duties as assigned
