Job Requirements
- high school diploma or equivalent preferred
- previous culinary experience of at least one year in a high-volume kitchen
- must be able to work second shift hours including weekends
- knowledge of safe food handling procedures
- ability to follow recipes and instructions accurately
- strong organizational and time management skills
- physical stamina to stand and work in a fast-paced kitchen environment for extended periods
- excellent communication skills and ability to work as part of a team
- compliance with company attendance and punctuality standards
Job Qualifications
- previous culinary experience of at least one year in a similar volume restaurant or banquet kitchen with proven successful results
- must be able to read and follow recipes unsupervised
- willingness to follow directions and ask questions for clarification
- safe knife handling skills and basic kitchen equipment handling skills including ovens fryers mixers slicers range-tops blenders processors and char broilers
- some experience in stock soup sauce or dressing making and basic meat and fish fabrication preferred
- ability to maintain calm professional demeanor during crisis or uncertainty
- ability to perform essential duties satisfactorily
Job Duties
- use a variety of cooking methods including poaching braising charbroiling searing and frying
- display classical and contemporary presentations of meats and vegetables
- maintain strong organization and cleanliness standards
- recognize and follow quality standards for meats vegetables fruits dairy products and grains including proper storage according to health standards
- understand seasonings for culturally diverse foods and knowledge of common food allergens intolerances and substitutes
- attend departmental meetings and daily rehearsals and provide suggestions for improvement
- follow company handbook policies and standard operating procedures
- assist guests and provide guest service beyond expectations
- ensure quality and service levels exceed guest expectations and company standards
- complete daily cleaning and responsibility checklists
- accept or reject ingredients based on quality or quantity
- minimize product waste
- work under executive chef sous chefs and kitchen supervisors following recipes and presentation techniques adhering to JW Marriott brand and hotel standards
- complete kitchen prep lists and set up and break down cooking stations including cleaning and food storage
- label and date foods and complete checklists and logs
- practice safe food handling and maintain sanitary service areas
- keep uniform apron and appearance clean and presentable
- follow safety protocols in food handling and transportation
- take full responsibility for quality presentation and garnishes of products served
- follow company green policies for waste and recyclables
- maintain exceptional attendance compliance with standards and guidelines
- communicate product needs shortages and equipment repairs promptly to supervisors
- follow JW service notes service harmonies and core values
- maintain team-focused positive attitude
- fulfill additional responsibilities as assigned by management
