Job Requirements

  • high school diploma or equivalent
  • previous experience in food service or kitchen operations preferred

Job Duties

  • report for work as scheduled

  • be responsible for familiarizing self with all phases of dietary work
  • set and maintain quality standards
  • solve production problems
  • report all data to supervisor
  • assist in planning and follow-through of specialty assignments such as lunches, parties, and banquets
  • enforce all existing cost control procedures
  • assist in inventory of materials and supplies to ensure proper stock level, storage and utilization
  • check-in delivery of all ordered items in absence of Food Service Director
  • review menus, production sheets, and catering sheets to determine type and quantities of foods to be prepared
  • plan work schedule to ensure food items are ready on time
  • confer with supervisor regarding scheduling, food preparation and usage
  • procure foodstuffs from refrigerators, freezers, dry storage or other storage areas
  • prepare, wash, trim, cut, cook, and season food items in compliance with facility's policies
  • measure and mix ingredients according to standardized recipes using various kitchen utensils and equipment
  • bake, roast, broil, and steam meats, fish, vegetables and other foods
  • taste and observe foods being cooked, adding ingredients or seasoning to improve flavor and texture
  • test food being cooked by temperature, taste, smell, observation or piercing to determine doneness
  • adjust heat controls and timers on various cooking equipment to assure quality products
  • carve portions for individual servings and prepare or direct distribution of food to serving units
  • ensure portion control as directed by menu or diet orders
  • suggest menu or recipe changes for timely utilization of foods
  • inform supervisor of inventory needs
  • take temporary responsibility of Food Service Department and personnel in absence of supervisor
  • check and maintain high standards of sanitation, safety, proper food storage and handling
  • share ideas with supervisor that might improve department and resident care
  • properly label and store leftover food
  • report any irregularity or violation of policy/procedure by employees to supervisor
  • disseminate information to co-workers as instructed by supervisor
  • report equipment irregularities or defects to supervisor
  • strive for optimal use of supplies and materials considering cost and budget
  • maintain confidentiality of all resident, departmental and organizational information
  • work effectively and cooperatively as a team member within Department and with other disciplines
  • observe dress and conduct codes including wearing identification badge
  • meet attendance standards and provide proper notice of absence
  • complete duties in prescribed time
  • follow all safety, security, exposure control and hazardous waste policies and procedures
  • attend in-services and department meetings
  • perform other duties as assigned by supervisor
