Job Requirements
- must be able to follow directions carefully and receive coaching when necessary
- must communicate with team during service for effective results
- must keep station clean and organized
- must maintain constant awareness of station needs
- must have manager level food handling certification
- ability to handle exposure to wet, humid, hot, cold, and noisy conditions
- capable of working safely around knives, machinery, ovens, open flames, and hot equipment
- must be available to work prep and service shifts
- able to perform multiple cleaning breakdowns daily
Job Qualifications
- high school diploma or equivalent
- previous experience in a professional kitchen environment preferred
- ability to follow directions and receive coaching
- strong communication and teamwork skills
- knowledge of food safety and sanitation standards
- ability to maintain cleanliness and organization
- physical stamina to work in a fast-paced environment with moderate to high noise levels
Job Duties
- manage a designated kitchen station under the direction of sous chefs and chef de cuisine
- adhere to standard operating procedures for food quality
- maintain compliance with food handling, sanitation, and cleanliness regulations
- participate in AM CDP prep shifts to understand dish components
- keep station clean and organized
- communicate effectively with team during service
- ensure all kitchen projects for the station are complete before service
- prepare the line ready by 5:30 pm and participate in dish tasting at 5:00 pm with chefs
- act professionally and maintain cleanliness during service
- respond promptly and collaboratively to expediter requests
- learn to run and spiel each dish on the menu after training
- complete daily temperature logs and maintain refrigeration temperatures
- follow daily cleaning checklists and be checked by sous chef
- perform three daily kitchen breakdowns including deep clean after service
- maintain manager level food handling certification
