Job Duties
- manage a kitchen station under the direction of sous chefs and chef de cuisine
- adhere to standard operating procedures for food quality
- maintain cleanliness and sanitation of the kitchen
- work AM CDP Prep shifts to understand dish components
- keep station clean and organized
- communicate effectively with the team during service
- ensure kitchen items are fresh and properly stored
- complete all prep projects before service
- set and ready the line by 5:30 pm
- participate in tasting dishes with senior chefs and implement changes
- perform professional conduct in an open kitchen during service
- follow expeditor guidance for service tasks
- call back to expediter confirming readiness
- run and spiel each dish after training
- maintain health and sanitation codes
- fill out temperature logs and monitor fridge temperatures
- complete daily cleaning checklists and receive checkout by a sous chef
- conduct three daily kitchen breakdowns including deep cleaning after service
- hand clean specified tools
- maintain manager level food handling certification
