Job Requirements

  • Sufficient education to demonstrate functional literacy
  • Minimum of one year institutional food service experience as a cook
  • Ability to work shifts including weekends and holidays
  • Ability to follow safety regulations and infection control procedures
  • Ability to participate in continuing education and in-service training
  • Ability to comply with corporate compliance program
  • Ability to perform cleaning and maintenance duties
  • Ability to communicate effectively with supervisors and staff
  • Availability to assist in state inspections and surveys

Job Qualifications

  • Sufficient education to demonstrate functional literacy
  • Minimum of one year institutional food service experience as a cook
  • Preferred experience in long term care food production
  • Knowledge of food handling, preparation and storage techniques
  • Ability to comply with state and federal laws and regulations
  • Ability to follow recipes and menu cycles prepared by Dietitian
  • Ability to supervise kitchen staff assisting with food preparation
  • Knowledge of infection control policies
  • Knowledge of safety and emergency procedures
  • Ability to use personal protective equipment
  • Strong communication skills
  • Honesty and integrity in care and use of resident and facility property
  • Commitment to resident rights and dignity

Job Duties

  • Assists cook in the preparation of meals, salads, desserts, snacks or other dishes for patients/residents
  • Follows diet orders and NPO diet orders
  • Serves nourishments in accordance with procedural guidelines
  • Properly stores leftovers/opened food
  • Follows procedures for serving partner meals
  • Offers menu substitutions and records them
  • Complies with infection control policies in the work area
  • Delivers trays to patients/residents on halls and in dining area
  • Assists with the serving/pouring of juice, milk, water, and tea
  • Cleans all tables in the dining area after each meal
  • Cleans work area at the end of shift and after meals
  • Cleans kitchen equipment such as carts, tables, counters, ice machine, buckets, blender, mixer, meat slicer, freezer, refrigerator, stove, steamer, garbage disposal, dish machine, coffee/tea maker, steam table
  • Removes garbage from kitchen areas and hoses out garbage containers
  • Scrapes dishes, washes dishes, pots and pans and stores properly
  • Records freezer and walk-in refrigerator temperatures
  • Maintains dishwasher and dish sink
  • checks and records water temperature and chemical levels
  • Maintains supply stock and properly stores items
  • Sets up tray line and performs tray line service
  • Operates dish machine, garbage disposal, mixer, blender, meat slicer, steamer, coffee and tea maker
  • Uses, cleans and maintains serving equipment
  • Follows recipes and prepares foods that correspond to menu cycles
  • Assists with supervision kitchen staff
  • Prepares and maintains supply of food substitutes
  • Inspects trays following meal service
  • Uses food preparation equipment according to manufacturer’s instructions
  • Handles, stores, disposes of food supplies and prepared food in compliance with regulations
  • Participates in center/agency surveys
  • Attends and participates in continuing educational programs
  • Complies with corporate compliance program
  • Reports job-related functions/tasks that involve hazards
  • Follows established safety regulations and procedures
  • Demonstrates knowledge of residents’ rights and dignity
  • Maintains honesty and integrity
  • Follows facility policies for safety and infection control
  • Reports injuries immediately
  • Communicates with Dietary Manager throughout shift
  • Assists Department Head with preparation for state inspections
  • Attends survey training
  • Reports problems promptly
  • Continuously cleans food service work areas
  • Uses food supplies and equipment efficiently
  • Prepares palatable, attractive, nutritionally adequate meals in institutional quantities
