  • Develop and revise standardized recipes

  • prepare foods for special or modified diets such as diabetic exchanges, low sodium, and food allergies
  • instruct lower-level cooks
  • use a variety of commercial food service tools and equipment
  • apply cleaning and sanitation practices
  • modify recipes for large quantities and determine portion sizes
