Job Requirements

  • High school diploma or equivalent
  • three to five years kitchen experience including two years in an equivalent position at a premier restaurant, resort, or hotel
  • basic hot and cold food cooking knowledge
  • proficient knife skills
  • ability to work in high-quality food production environments
  • compliance with company safety, health and sanitation standards

Job Qualifications

  • proficient knife skills
  • ability to work according to standards of quality and production in multiple kitchen venues

Job Duties

  • Prepare cold food sandwiches, salads, and dressings
  • basic vegetable prep including slicing, dicing, and proper handling
  • preparation and handling of meat, fish, vegetables, starches
  • basic hot food preparation including frying, grilling, baking, roasting, and poaching
  • cook for Employee Dining Room including salad bar setup
  • learn and maintain basic knife and equipment skills
  • keep recipe and setup documentation accurate
  • follow recipe cards exactly
  • work both sides of Pantry and banquet stations
  • assist with dish up for banquet functions
  • assist special events as needed
  • be cost conscious
  • rotate food in coolers, dry storage and personal mise en place to ensure freshness and reduce waste
  • keep work areas and refrigerators clean and neat at all times
  • clean, care for and store all equipment
  • report faulty equipment or unsafe conditions to management
  • train new employees at Cook 3 level
  • comply with all Pebble Beach Company safety, health and sanitation policies and procedures
