- Minimum 2 years previous line cook experience in a restaurant kitchen
- Solid knowledge of food products and culinary techniques
- Ability to learn and maintain a solid knowledge of the menu with attention to plating detail
- Ability to perform in a high volume kitchen environment
- Conversational English vocabulary
- Ability to read and comprehend recipes, simple instructions, and memos
- Ability to write simple correspondence
- Ability to present information effectively in small group situations

- Proficient knife skills
Job Duties
- Maintain food storage and handling procedures
- Maintain food quality and nutritional standards
- Perform technical culinary food production, portion control, and service standards
- Follow production schedule
- Prepare meats, poultry, game, fish, vegetables, and fruits including washing, peeling, cutting, seeding
- Weigh and measure ingredients
- Apply cooking methods such as stirring, mixing, whipping, breading, steaming, sautéing, frying, baking, roasting, braising, boiling, poaching, broiling
- Maintain cooking temperature, product cooling and labeling
- Lift and move equipment to and from work stations, stove, and refrigerator
- Maintain a clean and sanitary work station and equipment
- Distribute supplies, utensils, and portable equipment
- Stock and maintain sufficient food product levels at work station
- Follow proper plate presentation and garnish setup
- Properly store, rotate, and manage all food products following guidelines and procedures
