Job Requirements
- Work authorization for the location
- Minimum 2 years of line cook experience
- Ability to perform in a high volume kitchen
- Solid knowledge of food products and culinary techniques
- Ability to learn and understand the menu
- Ability to maintain cleanliness and sanitation standards
- Ability to follow food safety and handling procedures
Job Qualifications
- Minimum 2 years previous line cook experience in a restaurant kitchen, scratch kitchen preferred
- Solid knowledge of food products and culinary techniques
- Ability to learn and maintain detailed menu knowledge with attention to plating
- Experience working in a high volume kitchen environment
- Proficient knife skills
- Strong team-minded approach
- Primary food quality work ethic
- Conversational English vocabulary
- Ability to read and comprehend recipes and instructions
- Good communication skills for one-on-one and small group situations
- Basic math skills for weights, volumes, and distances
- Ability to follow detailed oral and written instructions
Job Duties
- Maintain food storage and handling procedures
- Maintain food quality and nutritional standards
- Perform technical culinary food production, portion control, and service standards
- Follow production schedule
- Prepare meats, poultry, game, fish, vegetables, and fruits including washing, peeling, cutting, seeding
- Weigh and measure ingredients
- Apply cooking methods such as steaming, sautéing, frying, baking, roasting, braising, boiling, poaching, broiling
- Maintain cooking temperature, product cooling and labeling
- Lift and move equipment to and from work stations
- Maintain a clean and sanitary workspace and equipment
- Distribute supplies, utensils, and portable equipment
- Stock and maintain sufficient levels of food products to ensure smooth service
- Follow proper plate presentation and garnish setup
- Properly store, rotate, and manage food products following regulations and company policies
