Job Duties
- Operate all stations in the kitchen including grill, gas range, electric range, broiler, deep fat fryer, serving table, waffle iron, griddle, skillets, and other kitchen equipment
- Portion and arrange food on serving dishes with precise portion control and presentation
- Prepare, season, and cook stocks, soups, sauces, meats, vegetables, and desserts
- Prepare, measure, mix, and cook appetizers, salads, pastas, sandwich fillings, waffles, and other food items following recipes
- Create intricate specialty hors d'oeuvres for high-end banquets and fine dining
- Inventory product, read menus and banquet event orders to estimate food requirements and create production plans
- Adhere to food safety and sanitation guidelines including HACCP standards
- Monitor and maintain proper food temperatures during preparation, cooling, holding, and serving
- Taste and observe food to ensure quality and specification compliance
- Assist guests with special dietary needs when necessary
- Clean kitchen equipment
- Communicate with guests on stage to explain cooking techniques or answer questions
- Conduct daily cold and hot holding equipment and food checklists
