Job Duties

  • Operate all kitchen stations and cooking skills including grill, gas range, electric range, broiler, deep fat fryer, serving table, waffle iron, griddle, skillets and other kitchen equipment
  • Portion and arrange food on serving dishes ensuring portion control and plate presentation
  • Prepare, season and cook stocks, soups, sauces, meats, vegetables and desserts
  • Measure, mix, cook and garnish basic appetizers, salads, pastas, sandwich fillings, waffles and other food items following recipes
  • Create intricate specialty hors d'oeuvres for banquets and fine dining events
  • Prepare products according to recipe guidelines
  • Inventory products, read menus and estimate food requirements to create production plans
  • Adhere to food safety and sanitation guidelines including HACCP standards
  • Monitor and adjust temperatures during food preparation, cooling, holding and serving
  • Test food quality by tasting, smelling and using cooking utensils
  • Assist guests with special dietary needs when Cook 1 is absent
  • Clean kitchen equipment
  • Communicate with guests when required to explain cooking techniques or answer questions
  • Conduct daily cold and hot holding equipment and food checklist
