Omni Oklahoma City Hotel is a prestigious luxury convention center hotel located in the heart of downtown Oklahoma City. Job Requirements
- Culinary experience of at least 2 years in a high-volume hotel or restaurant kitchen
- Ability to follow recipes and execute various cooking techniques
- Serve Safe certification preferred but not mandatory
- Basic math proficiency
- Excellent hand-eye coordination
- Willingness to work flexible shifts including days, nights, weekends and holidays
- Physical ability to lift 40 pounds and stand for extended periods
- Must live within 50 miles of Oklahoma City
- Maintain professional culinary appearance and attitude
- Must be able to prepare proteins to correct internal temperatures
- Must have knowledge of standard knife cuts and safety
- Experience with different cuts of beef, pork, seafood, and fish
- Ability to work efficiently under pressure and multitask effectively
Job Qualifications
- At least 2 years culinary experience in a fast-paced hotel or restaurant kitchen
- Fine dining experience preferred
- Serve Safe certification preferred or understanding of local health department food safety and sanitation standards
- Basic math skills to understand and implement recipes and measurements
- Good eye/hand coordination for use of kitchen equipment and professional cutlery
- Ability to follow recipes and make stocks, sauces, vinaigrettes, coulis, purees and soups from scratch
- Understanding of several cooking and preparation principles including sauté, braise, roast, poach, bake and steam
- Firm understanding of a la minute preparation
- Ability to multi-task in a fast-paced environment
- Must be able to cook most proteins to proper internal temperature
- Some meat and seafood fabrication knowledge preferred
- Good knife skills and understanding of industry standard knife cuts
- Culinary school or vocational school degree or certificate is a plus
Job Duties
- Prepare and cook food and perform other related culinary functions
- Demonstrate strong culinary skills and have advanced level proficiency in culinary functions
- Accomplish most tasks with minimal supervision and some guidance depending on complexity and skill level
- Maintain a solid understanding of various cooking methods, ingredients, equipment and procedures
- Correctly utilize and prepare food with most products and ingredients in use in the kitchen
- Maintain knowledge of traditional knife skills and apply skills in the kitchen
- Move and cover different stations following Omni standards and Chef's standards
- Perform job functions with attention to detail, speed and accuracy
- Execute soups and sauces with minimal supervision
- Prioritize, organize and follow-through
- Work well under pressure of meeting production schedules and timelines for guest orders
- Maintain good understanding of cooking methods, ingredients, equipment and procedures
- Follow Eco sure and health department standards
- Work with Sous Chefs to set up and stock stations with supplies and prep lists with minimal supervision
- Perform opening checklist with minimal supervision
- Set up workstation with required mise en place, tools, equipment and supplies according to standards
- Maintain a positive and professional approach with coworkers and customers
- Follow recipe cards and prep lists accurately
- Complete opening and closing procedures
- Maintain complete knowledge of correct maintenance and use of kitchen equipment
- Ensure food quality and timely preparation
- Communicate assistance needs to Sous Chef during busy periods
