Job Requirements
- High school diploma or equivalent
- Culinary experience
- Flexibility to work long hours including weekends and holidays
- Ability to lift up to 50 pounds occasionally and 20 pounds frequently
- Ability to stand for entire shift
- Ability to tolerate hot and cold kitchen environments
- Knowledge of menu preparation and cooking techniques
- Compliance with health and safety regulations
Job Qualifications
- High School diploma or equivalent preferred
- Experience in hotel or related culinary field preferred
- Culinary experience required
- Ability to stand for entire shift
- Knowledge of menu preparation according to hotel standards
- Proficiency in charbroiling, poaching, deep-frying, sautéing, braising, roasting, and par-cooking
- Knowledge of herbs and spices and their proper use
- Ability to work flexible and long hours
- Ability to withstand hot and cold temperature variations
- Medium physical work capacity
Job Duties
- Maintain cleanliness and organization of all storage areas
- Complete necessary food and station preparation prior to the opening of the restaurant
- Prepare and display buffet food items according to hotel standards
- Recognize quality standards in fresh vegetables, fish, dairy, and meat products
- Maintain clean and sanitary environment with proper handling, storage, and sanitation
- Prepare food for Banquets following banquet event orders
- Prepare and service food for the Employee Cafeteria as directed
- Prepare all foods following hotel standard recipes
- Breakdown buffets and kitchen line, storing food and equipment properly at end of meal periods
- Work banquet food station as scheduled
- Know the location and operation of all fire extinguishing equipment
- Practice safe work habits to avoid injury
- Use Production Charts as specified by hotel standards
- Support any kitchen position in need of help
- Follow all Health Department and Company regulations regarding food and storage
- Operate and maintain cleanliness of all kitchen equipment
- Maintain a "Clean As You Go" policy
- Assist in storage and rotation of food items according to procedures
- Sign keys out and in under supervision as needed
