Job Requirements
- High school diploma or GED preferred
- At least one year of quantity food cooking experience
- Current ServSafe certification within one year of hire
- Successful completion of assistant cook training program or equivalent experience
- Experience in acute care or institutional food preparation desirable
- Very good oral communication skills
- Ability to read, write, and understand English effectively
- Basic math skills
- Ability to work independently and prioritize work
- Physical ability to stand and walk more than four hours per day
- Ability to lift, push, and pull weights up to 50 pounds occasionally
- Ability to work in environments with exposure to extreme temperatures, odors, noise, and cleaning chemicals
- Willingness to follow safety precautions and use personal protective equipment
Job Qualifications
- High school diploma or GED preferred
- At least one year of quantity food cooking required
- Formal culinary training from an accredited program preferred
- Current ServSafe certification required within one year of hire
- Successful completion of assistant cook training program or one year experience as institutional quantity food cook required
- Experience in acute care facility food preparation desirable
- Very good oral communication skills
- Ability to read, write, and understand English
- Basic math skills for recipe adjustments
- Demonstrated ability to plate food attractively
- Ability to teach and train others
- Outstanding customer service skills
- Ability to work independently
- Formal training in food safety
- Ability to prioritize work to provide optimal patient care and service
Job Duties
- Sets up food prep area with appropriate par levels of food items and equipment needed to maintain an efficient flow of work and production
- Participates in culinary planning meetings related to food production
- Follows recipes and procedures to prepare from scratch high quality food items using various cooking techniques such as braising, roasting, broiling, baking, steaming, sautéing, frying
- Modifies and adjusts recipes and quantities with approval
- Slices meats and cheeses for deli and prepares protein salads
- Prepares plates attractively following plating procedures, portion control guidelines, and garnishes
- Follows production schedules and reports discrepancies
- Demonstrates competency in operation, care, and maintenance of kitchen equipment including mixer, steam jacket & kettle, slicer, chopper/food processor, oven, grill, deep-fat fryer, pizza oven, microwave oven, pasta cooker, stove, and blast chiller
- Maintains food safety standards including proper use of calibrated thermometer, food storage, labeling, and stock rotation
- Provides on-the-job training to new employees and acts as a role model
- Assists manager with in-service training
- Consistently follows sanitation and personal hygiene guidelines
- Maintains clean and neat work area
- Cleans and sanitizes all food handling equipment properly
- Uses and stores cleaning agents as required
