Job Requirements
- an or food handlers card or equivalent
- food protection manager certification within six months of hire
- three years of cooking experience in an institution or commercial firm serving complete meals or an associate’s degree in food service management, foods and hospitality service, or a directly-related field
- ability to work in a fast-paced healthcare environment
- flexibility to cover all cooking positions
- ability to follow HACCP and food safety procedures
- capability to handle cleaning chemicals and maintain a clean, sanitary workstation
- willingness to work varying shifts as assigned
- physical ability to stand for extended periods and perform kitchen duties
Job Qualifications
- food protection manager certification within six months of hire

- three years of cooking experience in an institutional or commercial kitchen or an associate’s degree in food service management, foods and hospitality service, or related field
- basic knowledge of therapeutic diets
- skill in checking trays for diet accuracy
- ability to participate in menu planning, recipe development, and testing
- preferred high school diploma or equivalent, apprenticeship, or vocational training
- preferred ACF certification as CC
- preferred hotel or high volume restaurant catering experience
Job Duties
- prepare food items for patients and visitors according to standardized recipes and menus or instructions
- perform mise-en-place including ingredient preparation
- cook ingredients using prescribed methods
- hold and serve food at proper safe temperatures
- chill and reheat food using food safety procedures
- label and date food products for storage
- ensure all foods are handled safely according to HACCP and infection control procedures
- monitor critical control points including hand washing, cooking, cooling, holding, thawing, temperature monitoring, and cross-contamination
- prepare sanitizing agents and clean food prep areas and equipment
- dedicate time at end of shift for cleaning and sanitizing work area
- maintain adequate product and supply inventories
- request and inspect delivered supplies for quality and safety
- create and oversee production schedules
- coordinate with supervisors to adjust orders as needed
- keep records of food prepared and leftovers
- perform other duties as assigned
