Job Requirements

  • high school diploma or equivalent, apprenticeship, or vocational studies
  • ability to work in a fast-paced, active kitchen environment
  • capability to participate in cleaning and sanitizing procedures
  • capacity to handle equipment noise and exposure to cleaning chemicals
  • adherence to safety data sheet guidelines for chemical handling
  • willingness to work varied schedules as determined by supervisors

Job Qualifications

  • an OR food handler's card or equivalent
  • food protection manager certification within 6 months of hire
  • three years cooking experience in institution or commercial firm serving complete meals
  • associate's degree in food service management, foods and hospitality service, or related field
  • basic knowledge of therapeutic diets
  • skill in checking trays for accurate diets
  • ability to participate in menu planning, recipe development, and testing

Job Duties

  • prepare food items according to standardized recipes and verbal instructions
  • mise-en-place all ingredients and supplies
  • perform all required food preparation
  • cook ingredients using prescribed methods
  • hold and serve food at proper safe temperatures
  • chill and reheat food using correct safety procedures
  • properly label and date stored food products
  • ensure food safety and sanitation procedures are followed
  • monitor critical control points and take corrective actions
  • prepare sanitizing agents and clean kitchen equipment and work areas
  • dedicate last 30 minutes of shift to cleaning and sanitizing
  • maintain adequate supplies and products for patient operations
  • request needed products and supplies
  • check delivered supplies for quality and temperature
  • develop and oversee production schedules
  • coordinate with supervisors for order completion and adjustments
  • keep records of prepared food and leftovers
  • direct other cooks and food service workers in food prep and presentation
  • coordinate with sous chef and executive chef
  • cover all kitchen roles as needed
  • perform other duties as assigned
