Job Requirements
- An OR food handler’s card or equivalent
- food protection manager certification within 6 months of hire
- three years of cooking experience in institution or commercial firm serving complete meals or an associate’s degree in food service management, foods and hospitality service, or a directly-related field
- ability to work in a very active environment with exposure to equipment noise, cleaning chemicals, and cooking agents
- willingness to adhere to safety procedures including handling MSDS sheets
- flexibility to adjust work schedule as departmental needs change
- capacity to cover all kitchen positions and coordinate with sous chef and executive chef
- mission-oriented approach to job responsibilities
Job Qualifications
- Three years of cooking experience in institution or commercial firm serving complete meals
- associate’s degree in food service management, foods and hospitality service, or related field
- food protection manager certification within 6 months of hire
- OR high school diploma or equivalent
- apprenticeship, ACF certification as CC, or vocational studies
- hotel or high volume restaurant catering experience
Job Duties
- Prepare food items for patients and visitors according to standardized recipes and instructions
- perform mise-en-place and all required preparation
- cook ingredients using prescribed methods
- hold and serve food at proper safe temperatures
- chill and reheat foods following safe food procedures
- label and date products properly
- ensure safe handling of all foods by following HACCP, infection control, and local health department guidelines
- identify and monitor critical control points and take corrective actions when necessary
- prepare sanitizing agents and clean food preparation areas and equipment
- maintain cleanliness of work area and dedicate last shift minutes to cleaning
- maintain adequate supplies for patient operations and events
- verify quality and safety of delivered food products
- create and oversee production schedules
- coordinate with supervisors and adjust orders as needed
- keep records of food prepared and leftovers for schedule adjustments
- perform other duties as assigned
