Job Requirements
- Hold an Oregon food handler's card or equivalent
- obtain Food Protection Manager Certification within six months of hire
- have three years of cooking experience in an institutional or commercial firm serving complete meals or possess an Associate's degree in Food Service Management, Foods and Hospitality Service, or related field
- understand and apply HACCP food safety procedures
- be flexible and mission oriented to meet business demands
- maintain proper sanitation and cleaning practices
- work within a dynamic, noisy, and active environment
- comply with safety data sheets for chemical handling
- be capable of covering all kitchen positions and coordinating with team members
- communicate effectively with supervisors and staff
- maintain accurate records of production and inventory
Job Qualifications
- An Oregon food handler's card or equivalent

- basic knowledge of therapeutic diets
- skill in checking trays to ensure diet accuracy
- ability to participate in menu planning and recipe development
- high school diploma or equivalent preferred
- apprenticeship or ACF certification as Certified Culinarian preferred
- hotel or high-volume restaurant catering experience preferred
Job Duties
- Prepare food items for patients and visitors according to standardized recipes and verbal instructions
- perform mise-en-place of all ingredients and supplies
- cook ingredients using prescribed best methods
- hold and serve food at proper safe temperatures
- chill and reheat food using correct food safety procedures
- properly label and date food products to be stored
- ensure all foods are handled safely following HACCP, infection control, and health department standards
- identify and monitor critical control points like hand washing, cooking, cooling, thawing, and temperature monitoring
- prepare sanitizing agents and clean food preparation equipment and work areas using dish machines or three-compartment sinks
- maintain cleanliness throughout the shift, dedicating last 30 minutes to cleaning and sanitizing
- maintain adequate product and supply inventory
- request needed supplies and verify deliveries for type, quantity, quality, and safety
- create and oversee production schedules in coordination with supervisors
- keep detailed records of food prepared and leftovers to adjust production
- coordinate with supervisors to accommodate last-minute orders
- cover all kitchen positions as necessary
- direct other cooks and food service workers in preparation, service, and presentation methods
- take corrective action regarding food safety and operational deficiencies
- participate in menu planning, recipe development, and testing
- adhere to department policies and procedures including safety, sanitation, and infection control
