Job Duties

  • Independently prepares all types of food for regular and modified diets
  • prepares, cooks, seasons, and portions food for all meals ensuring food products are ready at the appropriate temperature and time
  • prepares menu items using special or difficult recipes requiring numerous steps and many ingredients
  • calculates and determines serving portions from food quantities including meats, poultry, seafood, vegetables, fruits, sauces, and gravies
  • coordinates the cooking of items prepared by other cooks at one or more work centers
  • grills eggs, meat patties, pancakes, French toast, broils meats, makes cold sandwich fillings and assembles sandwiches
  • uses various cooking methods including broiling, roasting, baking, frying, boiling, steaming, stewing, braising, and grilling
  • slices meat items to specific size requirements or weight specifications
  • prepares fresh, canned, and frozen vegetables and baked items
  • prepares and heats convenience items and pureed foods adjusting consistency as needed
  • washes, peels, and cuts fruits and vegetables, assembles and mixes salad ingredients and desserts
  • makes various desserts such as cobblers, brownies, cookies, and pastries
  • tests and evaluates new food products and develops or modifies standardized recipes
  • weighs, measures and assembles ingredients for diets
  • operates kitchen equipment safely including ovens, steamers, grills, slicers, mixers, steam kettles, blenders, food processors, and scales
  • may serve as person in charge overseeing food safety activities
  • follows sanitary food handling procedures including covering, labeling, and dating food items
  • disassembles and cleans kitchen equipment
  • cleans, stores and maintains kitchen utensils and work areas
  • maintains accurate food inventories
  • assists supervisor in ordering food according to menu requirements
  • advises lower grade food service workers on tray assembly, dishwashing, and quality control issues
