Job Requirements

  • High school diploma or GED
  • Working knowledge of principles of sanitary food preparation
  • Ability to make practical application of department safety policies and procedures
  • Ability to supervise operation of kitchen equipment including dishwasher, steamer, food processor, blender, can opener, scales, meat slicer, vertical cutter, oven, mixer and grill
  • Ability to understand and follow written and oral instructions
  • Ability to perform simple arithmetic calculations
  • Ability to maintain clean and sanitized work areas using chemical cleaners
  • Ability to communicate effectively with co-workers and inmate workers
  • Ability to work in a team environment
  • Ability to work rapidly for long periods and manage several tasks simultaneously
  • Ability to physically perform essential duties including standing, walking, bending, lifting up to 50 pounds, hearing, and handling objects
  • Ability to comply with all employer and department policies including attendance, safety, and drug-free workplace
  • Ability to work extended and weekend hours

Job Duties

  • Prepares monthly menus and recipes, planning special meals for detainees with unique dietary needs according to doctor’s orders and discussing with Director of Food Services as needed
  • Supervises and trains Jail Inmate workers in preparing and serving meals, adding and subtracting measurements and quantities in recipes to adjust amount of prepared food as needed, and ensuring preparation is compliant with local codes, meals are served as scheduled, and Inmate workers work cooperatively
  • Supervises and trains Jail Inmate workers in cleaning and sanitizing all kitchen work areas, ensuring compliance with local sanitary codes
  • Responsible for completing a weekly inventory
  • Receives and verifies deliveries and ensures storage areas are maintained clean and orderly
  • Provides production sheets, meal counts for each meal served, special diets served and maintain security of knife and utensil inventory
  • Performs related duties as assigned
